The Food Technology course was started in this institute in 1976. It has an intake capacity of 15 students. It is the first and the only such course in Goa. The programme is spread over 7 terms and has a sandwich pattern consisting of 2 phases of Industrial Training spread over 7 months. The Department is housed in a separate block behind the main Institute building.

The programme deals with Preservation, Processing and Packaging of different foods. It imparts expertise in scientific handling of food. The goal is to ensure wholesome and nutritious food to all mankind.

Students completing this course are well equipped to work at Supervisory/Middle Management levels in the Production and Quality Control Departments of Food Processing Industries.

The Department of Food Technology has excellent and spacious laboratories with appropriate testing facilities. The laboratories are mainly used for conducting the various practicals as per the curriculum. Nonetheless they have the infrastructure and the know-how, for conducting the various tests related to Food Technology, of the external works under the Resource Generation Scheme of the Institute.

The Ministry of Food Processing Industries has given the Department, a grant-in-aid of Rs. 42.4 Lakhs, under their scheme for Human Resource Development in January 2004. This is the only Polytechnic to be selected under this scheme and the objective is to create better infrastructural facilities like Laboratories, Testing Centres etc.

An instalment of Rs. 22 Lakhs was received by the Department and the same has been utilised for development of two laboratories namely Microbiology and Chemistry in addition to the existing laboratories.
